Peaches 'n' Cream Bread Pudding


4 cups Be Happy and Healthy® Old Fashioned Pound Cake, cubed
2 medium ripe peaches, peeled and diced
1/2 cup pecan pieces
1/2 cup peach preserves or spread (low sugar preferred)
2 Fruitfull® Frozen Peaches 'n' Cream Bars, softened
2 cups low fat milk
3 ounces reduced fat cream cheese, softened and cubed
3 eggs or egg substitute equivalent
1/4 tsp mint extract
garnish- mint sprigs

Instructions:  Arrange the cake cubes in an oiled 9 inch square baking pan. Arrange the peaches and nuts over the cubes. Drizzle the preserves evenly over top. In a blender container place the fruit bars (removing sticks), milk, cream cheese, eggs and extract. Blend till smooth. Pour over the cake cubes. Let stand 15 minutes then bake at 325 degrees 50 minutes or till set. Let stand 10 minutes before serving. Garnish each serving with mint.

Serves 8.
