Prize-Winning Baked Fruitfull® Alaska

3 Coconut Fruitfull® bars
2 tbsp of rum (optional)
3 egg whites
1 pineapple
1/2 cup plus 1 tbsp of white sugar

Instructions:

Cut pineapple in half lengthwise. Cut out pulp and discard core, then cut pulp in chunks. Add the rum to the pineapple chunks and place back into pineapple shell.

Soften Coconut Fruitfull® bars and pack Fruitfull® on top of the pineapple. Freeze about 2 hours, until very firm but not hard.

Preheat oven to 400 degrees F. Whisk egg whites in a bowl until stiff. Whisk in 1/4 cup of sugar, then whisk 1 more minute. Fold in 1/4 cup of sugar.

Pile meringue over mix completely covering it. Make small peaks in meringue with a flat knife. Place on a baking sheet and sprinkle with remaining sugar. Bake about 8 minutes, until meringue is set and brown. Serve immediately.
