Lemon Blueberry Bread
Parfait

4oz lemon blueberry bread cut into squares
For the lemon curd:
store bought is good but my recipe is best!
4 T soft butter
1/2 c sugar
1/4 c fresh lemon juice
1 T fresh lemon zest
pinch of salt
3 egg yolks

Instructions: Melt the butter
in a small heavy sauce pan.
Remove pan from heat and whisk in all the ingredients until smooth.
Put back on heat and cook until the mixture thickens up but don't boil. It takes
about 5 minutes.
Pour lemon curd into a strainer resting over a bowl and let it cool like that,
whisking occasionally. Curd will go through the strainer and you are left with
a delicious concoction!
Store in fridge for an hour or until you are ready to assemble parfaits.
Make the whipped cream right before assembling:
1 c heavy cream
2 T confectioner's Sugar
1 T finely grated lemon zest
In a large bowl, beat the cream with an electric mixer on high until soft peaks
form. Add sugar and zest until stiff peaks form.
Take out 4 nice glasses or a parfait bowl. Line the bottom with bread. Then
add a layer of curd and top with whip cream and repeat. Final layer make a nice
swirl of the whip cream. So good! Serves 4 generously, 8 very stingy! :)

I love using Lemon Blueberry Bread as my Parfait base that is alternated
with Lemon Curd and Lemon Whipped Cream. Relatively Healthy and Divine!! The
whipped cream is best handmade but the curd can be store bought although I make
my own curd b/c it takes great alone as a spread on the bread, too!
