Nutty Orange Cake

 
1/2 cup chopped Calypso Cashews
1 cup raisins
1 cup buttermilk
1/2 cup butter
1 cup sugar
1 egg
2 cups flour (sifted)
1 tsp. baking soda
1 orange rind- grated
 
Glaze
 
1/2 cup sugar
Juice from a medium orange
 

Instructions:

Cream butter and gradually add sugar. Add egg. Stir in grated orange rind. Sift together flour and baking soda. Add to creamed mixture. Add buttermilk and raisins and stir into mixture. Add cashews. Pour into a greased bundt pan. Bake approximately 45-50 minutes at 350 degrees.
 
Prepare glaze by stirring together juice and sugar. Pour over cake once it is removed from the oven and let it cool.
