Instructions: Heat olive oil in a small non-stick skillet over medium heat. Add 1/2 cup pecans. Sprinkle pecans with sugar. Sauté for 2 minutes until pecans begin to brown. Remove from heat and let cool.
Wash spinach carefully. Remove large stems and break into bite-sized pieces. Toss with apples, oranges and strawberries. In a separate bowl, whisk together the thawed Fruitfull® bar and the mayonnaise until smooth. Toss with spinach and fruit mixture. Add sugared pecans and toss lightly. Serve immediately.
Yields 6 to 8 servings.
