Berried Treasure Rice Salad
4 cups cooked white rice, at room temperature
1 cup sliced strawberries
1/2 cup fresh blueberries
1/4 cup diced celery
2 Tbsp minced red onion
2 Tbsp snipped mint
Dressing
1 Fruitfull«® Lime Juice Bar, softened
2 Tbsp olive oil vinaigrette dressing
1/2 tsp lime zest
1/4 tsp crushed red pepper
Butter lettuce leaves
1/4 cup Be Happy and Healthy® Snacks Power
Pistachios, chopped

Instructions: Combine the
rice, berries, celery, onion and mint in a large bowl.
Whisk together the ingredients for the dressing
in a small bowl. Toss with the rice mixture to evenly coat. Scoop the salad into
the lettuce leaves and sprinkle on the pistachios. Serves 4.
