CARIBBEAN CHEESE SPREAD
4 FRUITFULL® PINEAPPLE BARS
1 CUP "GOT NUTS?"
1 CUP "JAMAICAN-ME-CRAZY CRANBERRY MIX"
3 (8 OUNCE) PACKAGES OF SOFTENED CREAM CHEESE
1/4 CUP FRESH CHOPPED PARSLEY
1 SHALLOT MINCED
1 TABLESPOON SEASONING SALT |
Instructions:
1. MELT FRUITFULL® PINEAPPLE BARS IN MICROWAVE FOR
ABOUT 5-6 MINUTES. STOP AND STIR
EVERY MINUTE OR SO. DRAIN 3/4 OF JUICE BUT
RESERVE THE PULP.
2. IN FOOD PROCESSOR, PROCESS 1 CUP OF "GOT NUTS?" UNTIL SMOOTH. ADD
"JAMACAIN-ME-CRAZY" MIX AND PROCESS UNTIL
SMOOTH. SET ASIDE.
3. IN MEDIUM BOWL, COMBINE CREAM CHEESE, PARSLEY,
SHALLOTS, PINEAPPLE, AND SEASONING SALT.
4. FORM MIXTURE INTO A BALL OR INTO A PRESET MOLD. WRAP TIGHTLY WITH
PLASTIC WRAP AND REFRIGERATE UNTIL FORM HAS
SET, (APPROX 2 HOURS).
5. JUST BEFORE SERVING, REMOVE PLASTIC FROM BALL/FORM
AND ROLL INTO PROCESSED "GOT NUTS?" AND
"JAMACIAN ME CRAZY" MIX.
MAKE SURE ALL SIDES ARE COATED
WELL.
6. SERVE WITH YOUR CHOICE OF CRACKERS, OR TRY PITA
BREAD FOR A SALTY SWEET-CREAMY APPETIZER!
