Chicken Breasts in Ginger Fruit Sauce

 
4 (4 ounce) boneless, skinless chicken breasts
¼ cup light soy sauce
1 tablespoons olive oil
1 medium sized, minced purple onion
1 tablespoon minced fresh ginger
2 garlic cloves, minced
2 Tropical Splash Fruitfull® bars, thawed
1 large orange, peeled, sectioned, and coarsely chopped
¼ cup Be Happy and Healthy® Calypso Cashews, chopped
3 tablespoons chopped fresh cilantro
Garnish: fresh cilantro, minced

Instructions: 

Place chicken between two sheets of heavy duty plastic wrap and flatten to ¼ inch thickness, using a meat mallet or rolling pin. Dip chicken in soy sauce, reserving remaining soy sauce.
 
Cook chicken in olive oil in a large nonstick skillet over medium-high heat 4 minutes on each side or until done. Remove chicken from skillet, reserving drippings in skillet; keep chicken warm.
 
Add remaining reserved soy sauce, onion, ginger, garlic and thawed fruit bars; sauté until onions are tender. Stir in orange and cilantro; until heated, but do not over cook. Spoon  soy mixture over chicken.  Sprinkle with cashews. Serve immediately. Garnish with fresh cilantro, minced.
 
Yield: 4 servings
