Instructions:
Place chicken between two sheets of
heavy duty plastic wrap and flatten to ¼ inch thickness, using a meat mallet
or rolling pin. Dip chicken in soy sauce, reserving remaining soy sauce.
Cook chicken in olive oil in a large
nonstick skillet over medium-high heat 4 minutes on each side or until done.
Remove chicken from skillet, reserving drippings in skillet; keep chicken
warm.
Add remaining reserved soy sauce,
onion, ginger, garlic and thawed fruit bars; sauté until onions are tender.
Stir in orange and cilantro; until heated, but do not over cook. Spoon soy
mixture over chicken. Sprinkle with cashews. Serve immediately. Garnish
with fresh cilantro, minced.
