Curry Cashew Crackers
1 1/2 cups all-purpose flour
1/4 cup cornmeal
1 cup Be Happy and Healthy® Snacks
- Calypso Cashews
1/2 tsp salt
1/2 tsp curry powder
2 tsp sugar
6 Tbsp butter
3-4 Tbsp water

Instructions: Combine the
flour, cornmeal, cashews, salt, curry and sugar till well
mixed. Using clean fingers work in the butter till blended. Add 3 Tbsp
water and mix well, pressing the dough with hands to
form a ball. Add more water if needed. Cover the dough
and refrigerate 1 hour or till firm. Pinch off 1 inch pieces of dough and roll
into balls. Place on greased baking sheets. Press with
a flat-bottomed glass into 2 inch rounds. Bake at 350
degrees 10 minutes or till browned around the edges. Serve warm
or at room temperature. Makes about 30. Nice with a bowl of soup or a
salad of greens.
