Instructions: Preheat oven to 350 . In a shallow dish, mix together ground cashews, flour, cayenne pepper and salt. Place thawed coconut cream bars in another shallow bowl. Dip pieces of chicken breast in pecan-flour mixture then in coconut cream and back in mixture to coat. Melt butter or margarine. Brown chicken breast pieces. Place in baking dish. Pour wine or gingerale around chicken in baking dish. Cover with foil and bake for 20 min. Uncover and bake for 10 min. longer. Sprinkle with chopped cilantro. Makes 4 servings.
