Instructions:
Chop and then lightly toast cashews in toaster for approximately 5
minutes. Melt margarine and mix in a bowl with the mustard, honey and
Bourbon (if desired) and set aside. In a separate bowl, combine bread
crumbs, cashews and parsley and set aside. Sprinkle fillets with salt
and pepper and place on a lightly sprayed baking sheet. Brush honey
mustard mixture over fillets. Cover the top side of each fillet with
the cashew bread crumb mixture. Bake for approximately 10 minute at 450
degrees.
