Instructions: Soak the farro in cold water for 20 minutes; drain. Bring a large pot of water to a boil, add the farro, reduce the heat and simmer 20 minutes or till tender yet still firm to the bite. Drain and place in a large bowl with the rest of the salad ingredients. In a blender place the ingredients for the dressing; blend till smooth. Drizzle dressing over each serving of salad. Serves 4.
